BACON-WRAPPED PORK TENDERLOIN WITH CLAMS AND SWEET PEAS

10 ounces pork tenderloin

Salt and freshly ground black pepper

½ pound sliced bacon

2 tablespoons canola oil

1 shallot, minced

1 small clove garlic, minced

12 Manila clams, or small littlenecks (see Note)

2 tablespoons white wine

14 sugar snap peas, strings removed

1 tablespoon unsalted butter

¼ cup shelled peas

1 cup pea leaves or pea sprouts (optional)

3 fresh mint leaves, julienned

2 fresh basil leaves, julienned

Freshly squeezed lemon juice, for serving
